2017 Champoux Cabernet Sauvignon

In 2017 we decided that the Cabernet from Champoux has long been established and that we should recognize that on the bottle. Hence the creation of a full new line-up of single vineyard wines featuring our signature grapes. This vintages blend consists of Cabernet Sauvignon from multiple blocks of Champoux Vineyard and a little Petite Verdot. This wine was fermented and aged in 20% new French oak barrels and 80% neutral French oak barrels because we didn’t want to over power any of the classic Cab Sauv characteristics with too much new oak. 2017 was a solid vintage that allowed for full phenolic ripeness due to a cool second half of September which allowed for extended hangtime with minimal sugar accumulation.
